Please provide ADB logcat output and details about your WiFi? setup, encryption, signal quality, make/model of the access point.
Does it work with the original firmware?
Does it happen with anoa?

- anoa did have too much problems for me, I have removed it completely (GPS)
- Archos firmware is stable (however I do not know which kernel the Archos Donut will use if I have modded openAOS, I hope it is the original)
- I use a Archos 5 it Gen7 device
- I use a FritzBox? WLAN router which is very stable to all other devices
- I use WPA2 encription AES

I think i could help with the adb because it is working here.
However what can I log for you? Simple a logcat output or a log between a disconnect? (loging before and after and send only the new logs)

- The signal is always very good, also if the connections are going down
just before the total disconnect it has only the lowest signal strength for about 30s.
- accesspoint is near the device (3 meters)

Got it.
You will find a long logfile where I pinged the device.
Then I opened a browser and do the cyanogenmod page with no problems.
Then wait for some time and suddenly the disconnect.
You can search for cyanogen wiki entry then you will find the disconnect and later the DHCP reconnect.

it is in the zip file because it was detected as spam :(

A test with hevy network transfere (online radio) shows no disconnect.
Perhaps this is a WLAN power management problem which sends the device uncontrolled to a sleep mode.
